SIMULASI DISTRIBUSI TEMPERATUR DAN EVALUASI KESERAGAMAN PEMANASAN PADA RETORT STERILISASI MAKANAN MENGGUNAKAN CFD

Abstract

Distribusi suhu yang tidak merata dalam retort dapat mengurangi efektivitas sterilisasi dan berpotensi menimbulkan titik-titik dingin yang memengaruhi keamanan dan kualitas produk pangan. Penelitian ini bertujuan untuk menganalisis distribusi suhu, karakteristik aliran uap jenuh, distribusi tekanan, dan keseragaman pemanasan dalam retort sterilisasi pangan menggunakan Computational Fluid Dynamics (CFD). Model retort horizontal dengan panjang 1800 mm dan diameter 750 mm disimulasikan menggunakan metode Computational Fluid Dynamics (CFD) dengan mesh tetrahedral optimum sebanyak 3.028.451 elemen berdasarkan hasil uji independensi grid. Model turbulensi realizable k-ε digunakan untuk merepresentasikan karakteristik aliran turbulen dan perpindahan panas pada sistem retort.  Variasi suhu masuk yang digunakan adalah 115°C, 117°C, 119°C, 121°C, dan 123°C, dengan kecepatan aliran uap 2–10 m/s. Hasil simulasi menunjukkan bahwa peningkatan suhu masuk memiliki pengaruh dominan terhadap peningkatan suhu permukaan, dari 175,25°C pada suhu masuk 115°C menjadi 188,81°C pada 123°C. Koefisien perpindahan panas juga meningkat dari sekitar 6,70 W/m²C menjadi 7,48 W/m²C seiring kenaikan suhu operasi. Hasil tersebut berpotensi untuk direkomendasikan dan diterapkan secara praktis di lapangan.
